Spicy Nut Crumbs Encrusted Pork Cutlets

Pork can be one of the yummiest cuts of meat to cook. Especially when covered with Nut Crumbs! This is a super simple recipe that is great for busy week nights and meal prep.

Ingredients

Spicy Nut Crumbs

Pork Cutlets

Almond Milk

Eggs

Extra Virgin Olive Oil

Salt & Pepper

Broccoli Rabe (or your veggie of choice)

 

We bought a pork variety pack which had some light and dark meat in it. Both are delicious. Feel free to use your favorite cut of pork for this simple recipe. 

Start out by pounding your pork cutlets with a meat tenderizer. This step is super important for the perfect textured meat. Lightly salt & pepper the pork. Spicy Nut Crumbs are pretty flavorful, so you may not find the extra salt & pepper necessary!

Grab a few eggs and whisk together with a splash of almond milk. Coat the pork in the egg mixture and dredge in the Spicy Nut Crumbs. Preheat your oven to 350 degrees.

Once meat is prepped, heat up a few tablespoons of Extra Virgin Olive Oil in a pan. If you prefer to use coconut oil, ghee or some other healthy alternative, this recipe will be just as delicious! Once oil is hot place the pork cutlets in the skillet and let cook for 2 minutes on each side.

Once golden brown, place the cutlets on a baking sheet and stick in the preheated oven for another 5-10 minutes. Take out and let rest for a few minutes before serving.

Sautee your broccoli rabe (or some other veggie) in some EVOO and sprinkle with salt & pepper for the perfect side!
