Ingredients:
Add all your ingredients into a bowl and mix together with your hands. You want to make sure all the ingredients are fully combined without over mixing. The bubbles from the sparkling water (seltzer or any kind works the same) help keep the meat light and fluffy when it cooks. Its the miracle secret ingredient for turkey meatballs, meatloaf, or burgers. No more hockey pucks :)
Once ingredients are combined, form into patties the size of your palm. I made these a bit thick...almost like a cross between a giant meatball and a burger patty.
Once you have your patties ready to go, fire up the grill! Heat the grill on high with the lid closed and make sure to clean the wrack. Once grill is nice and hot, turn the heat down a smidge to medium heat. Put the burgers on the grill, close it, and WALK AWAY! If you move the turkey burgers too soon, they begin to fall a part. Let the burgers cook for about 5 minutes and flip once...and only once. For the second half, I leave the grill open and cook for another 3-5 minutes. If you are adding cheese, add it in the last minute and shut the grill so the cheese gets nice and melty. Brie cheese would be EXCELLENT on these!
If you don't want to grill these, you can cook them several different ways. You can get a pan sizzling with some e.v.o.o. and ghee, air fry them, or even bake them if you'd like.Frying the turkey meat in a little fat does wonders for the texture, taste, and overall mouth feel of the burger, but sometimes you just feel like a grilled burger :)
Now for the toppings! We topped ours with our homemade hummus (recipe here), habanero pomegranate jam from the farmers market, and a sliced red onion. A bun, flax seed toast, or lettuce are a fantastic vessel.
