This fun twist on grandma's meatloaf is an easy weeknight dish that the whole family will love! We took some inspiration from some fun upside-down focaccia bread videos we've been watching on instagram and thought...hmmmm what if we tried this with meatloaf! The result...delicious!

For this recipe you will need a bread pan. We used a cast iron one and lined it with parchment. If you want your onions to get crispier, we recommend not using parchment, but you will have to grease the pan really well to be able to get the meatloaf out in one piece.
Start out by drizzling some olive oil on the bottom of the pan and place your sliced onions out flat. Cover in a thin layer of Nut Crumbs and some salt & Pepper. This would be a great place to also drizzle some hot honey if you wish to add it to the recipe :)
Next, add the rest of the ingredients into a bowl and mix together with your hands. You want to make sure all the ingredients are fully combined without over mixing. The bubbles from the sparkling water (seltzer or any kind works the same) help keep the meat light and fluffy when it cooks. It's the miracle secret ingredient for turkey meatballs, meatloaf, or burgers. No more hockey pucks :)
Stick loaf into a 350 degrees preheated oven and cook for 35-40 minutes.
When the meatloaf is cooked, you will want to lift out (if you've used parchment paper) and flip on to a cutting board OR flip the bread pan over and lightly tap to release the meatloaf onto the cutting board, onion side up!
Drizzle with some more bbq or spicy teriyaki sauce and serve up with a nice salad, roasted carrots or mashed potatoes and enjoy!
